Let’s Meal Plan Like We Love It

Because planning meals can be a form of self-care (and honestly, kinda fun).

Here’s a little truth: I genuinely love meal planning. I don’t do it on Sundays though—I’m a Wednesday meal planner through and through. There’s something about that midweek clarity that just hits right and helps me reset while the week's still in motion. Give me a notebook, my favorite pen, and a cup of coffee, and I’m in my happy place.

It helps. It makes my week smoother, my brain less overloaded, and my fridge look like I have my life together (even if I don't).

How I Keep It Simple:

I don’t plan every meal. I plan just enough to feel like I’m not winging it every night. That means:

  • 2 breakfast lunch options

  • Lunch- leftovers from dinner!

  • 4 dinners

  • The rest is "whatever doesn’t require emotional labor"

Sample Dinners:

Monday: Sheet Pan Chicken & Veggies (I toss it all on one tray and call it gourmet—the Large Sheet Pan makes cleanup a dream.) Wednesday: Zucchini Noodle Stir Fry Friday: Make-Your-Own Pizza Night (Less planning, more fun)

Always in My Fridge:

  • Fresh fruit

  • Prepped veggies

  • Something dippable (hummus, guac, salsa)

  • Cheese (obviously)

Favorite Shortcuts:

  • Cook once, eat twice (I double up on dinner so lunch is ready, but also freeze what I won’t use during the week)

  • Breakfast for dinner when all else fails

  • Freezer meals from past-me (thank you, past-me)

So no, I’m not a Pinterest meal-prep goddess. But I am a woman with a plan, a pan, and a pantry that usually has chocolate.
